Background

This Cabernet Sauvignon is sourced from the Central Coast’s Paso Robles AVA, which has been enjoying a well-deserved explosion in popularity. Located near the Pacific Ocean, Paso Robles boasts the largest diurnal range of any wine region in CA. This swing between daytime and nighttime temperatures — up to 50 degrees Fahrenheit! — is due to cool marine air flowing east through the Templeton Gap and south along the Salinas River from the Monterey Bay. The result is Cabernet Sauvignon with rich fruit, full bodies, and silky tannins, but with a firm acid backbone.

Sourcing

This wine is sourced from both the east and west sides of Paso Robles. The warmer inland climate of the east provides rich fruits and plush tannins, while the more mountainous cooler climate of the west provides food-friendly acidity.

Varietal Composition: 97% Cabernet Sauvignon, 2% Petit Verdot, 1% Petite Sirah

Winemaking

Hand-picked at the peak of flavor development, the grapes are crushed and cold-soaked for 24 to 48 hours. During the 10 to 15 days of fermentation the cap is punched down in the early and later stages and pumped-over during its peak. This maceration process maximizes the extraction of flavor, color, and tannin from the grape skins and allows us to capture it in the fermenting wine. The wine then completed malolactic conversion and aged in oak: 30% new and comprised of a blend of 80% French and 20% American oak, and allowed to rest for 18 months.

Tasting Notes

Compelling aromas built up upon ripe cherry, rich pomegranate juice and fresh maple syrup lift from the glass. Lively fruit on the palate, expressive of ripe raspberry, fresh fig, and succulent plum and framed by cola spice and burnt butter cookies. The finish is soft and lingering. As the vibrant fruit starts to fade, warm comforting notes of vanilla, marzipan and cocoa take over.
